It felt too complex and too time-consuming to bring to life… until the distillery boiler broke while two fermentation tanks sat full: one fermenting wildly with agave fibers, the other a wild fermentation without. We couldn’t distill — so we waited.\u003c\/p\u003e\n\u003cp\u003eThat “problem” became the turning point. The fermentation stretched past 30 days, becoming one of the longest tequila fermentations ever recorded. What many would call waste, we chose to honor. Sergio Cruz, our master distiller, worked the distillation with care and precision, yielding two distinct batches — each with their own character.\u003c\/p\u003e\n\u003cp\u003eRemy Newland, one of tequila’s greatest palates and a dear friend of this community, was the first to taste both. The blend became something special — and after bottling, enough remained to fill nine barrels. Eight will continue aging into extra-añejo.
